What to do with leftover Pulled Pork?

Other than ABT's what can I do with leftover pulled pork. I had that big cook out this weekend and it was great, but I have 2 huge freezer bags full of pork. What can I do with it, other than ABT and just freeze it?

wish i'd have recorded who posted this:[p]Pulled Pork Enchaladas[p]don't care for the red sauce, so I just converted my recipe for pulled pork. I dont have exact measurements on the jalapenos, it all depends on how how they are. Some jars are hotter than the others, and it depends on how hot you like them. This method will definately be a requirement when we do pulled pork now.[p]Saute a medium onion with some chopped jalapenos.
Add pork (enough for 5 large tortilla shells)and about 1/2 cup beef broth just to bind it together.
Use large flour tortillas, put pork mixture and some cheese and in center then roll up-put into 9x13 pan.
For sauce:
simmer together 1 regular can of cream of chicken soup,
1 16-ounce sour cream,
some chopped jalapenos,
and some of the jalapeno juice. [p]Pour over enchaladas, sprinkle with more cheese, and bake at 350 until cheese on top is melted.

Hamm, use the Foodsaver to remove all the air and then freeze it in individual bags. I put just enough in a bag to make one meal for my wife and me. It is fantastic, even months later. With the FS it taste just like it did the day you pulled it. If you own an egg you really need to have a foodsaver.[p]Van

I concur! Spread some Big Chief barbecue sauce on a pizza shell, add pulled pork, sauteed poblano and onion slices, topped with shredded jalapeno or habanero jack cheese and some chopped fresh cilantro, and Egged until the crust is done and the cheese melted. Mighty fine.

Substitute pulled pork for grilled chicken in a salad.
Pig salad I believe is what they call it.
I make a chef type salad with it with an assortment of goodies.

No joke, I had the cook on Friday, and literally, for every meal, breakfast, lunch, and dinner, I have ha pulled pork and Rudy's sause. Still have about 5 pounds to get trough.
