I'm making the recipe of "The Pioneer Woman" and I have to do them in my oven because I'm doing a meatloaf on the grill. I would like to put some bacon on them and then top them off with some cheese.
the questions I have are: Do I put raw bacon on them and allow the over to cook them or cook it ahead of time, and what cheese would go well with bacon and sour cream? Thanks, Mark

I would pre-cook the bacon and crumble on the taters.
Can't go wrong with shredded cheddar, though the lighter cheeses would work.

Definitely cook the bacon first. Cheddar, Gorgonzola, Gouda or fresh parm are some of my favorites. You can also skip the sour cream and use Boursin spreadable cheese. It's very creamy and contains garlic & herbs.

I wasn't sure about gouda, but I have that so I try it and I don't have to stop and buy cheese now...Thanks!!!!

Use less sour cream if you are using the gouda.

i do those and deep fry them, i use the smallest new potatoes i can find, boil, refridge, break in the palm of my hand, fry. great for a fish fry with some malt vinegar and ketchup or a meatloaf with some gravey etc.

you can lead a fish to water but you can not make him drink it

cant remember the recipe but it was lemon and chopped herbs, maybe just a little oil drizzled on after frying them that was good, more healthy but its hard to make a potato healthy, there is nothing good healthwise in a potato

Pioneer Woman's straight recipe is really good, as is !!!!! I made it last week, using rosemary. Why don't you make it like she does, and have crumbled bacon and grated cheese on the side for people to put on it, if they wish to?

Kinda like you get a baked potato at a restaurant, and the waitress comes around asking if you want bacon, cheese, sour cream, and/or chives.

That's a great idea. Thank you I will do that.

Oh, but it's so much better when the cheese is all melted and gooey with the bacon bits and pieces stuck throughout!
