OK...........I'm bad........had a couple of "cold ones" last night and sort of messed the fire up. My Boston Butt (8 lbs) has been cooking for 16 hours @ 225 and still has not hit 160. Can I kick up the heat a bit and finish it off? I have 6 hungry people looking at me very eager......thankfully they don't know good "Q"........I need to feed them NOW........can I kick up the temp? I now I'm going to catch it one this one, but what can I do.[p]BY the way..........the BGE held steady for over 12 hours at 220.
THANK YOU ![p]

midnight smoker,[p]conventional wisdom says you can take the temp up to about 300º Open the dome and stick a fork in and gently twist - easy twist it may be done no twist it ain't done. HAve you tried different places for your temp probe? Try that first.

    Sundown,
I normally cook my boston butt 5-7 lbs @ medium-low
thats right at 300. I will cook my bb to 195 degrees(my normal cooking time is average of 6hrs)at that point I can easily pull the pork because its so tender.(use a glove, because it's very hot). I like it best with a rub for cooking and vinager sauce for dipping. I find its best to use an instant read thermometer. I like your twist idea.
