What's up with this brisket

Okay, got the egg started and had the temp regulated at about 210 degrees and put wood and brisket on at 8:00pm . Woke up at 3:15 this morning and egg was still holding at 210 and the brisket was at 143. re checked it at 6:30 and the egg was still at 210 and the brisket at 145. This is a 7 lb brisket and should have been close to done after that length of time I thought. I cranked the heat up to 250 and as of now 8:40 the brisket is at 161. Why is it taking so long????? greggor
