Havent posted any pix in a while..so hope I don't screw this up!...was a rainy day here all day y'day and since UK was outta the NCAA tourney, decided to smoke some spares...
Mopped w/mustard and dusted w/Dizzy original and course grind...
On the large at 210d indirect, pecan & cherry smoke..dusted w/John Henry Pecan as I put them on..
'bout 3 1/2 hrs in, removed and foiled w/apple juice and honey...
After the foil cook..mopped with Sweet Baby Ray's Honey/Chipotle for the finish...
Good Eats! :woohoo:

How does the John Henry Pecan compare to Dizzy Dust? They sell that here in Lexington and I've thought about trying it.Large & MiniMax in Lexington, KY

Yeah..I'm still in mourning over both of those! :pinch:

I like them both...the JH has a LOT of sugar in it, but the pecan flavor is awesome on many kinds of food, we even use it on baked potatoes..I'd definitely recommend trying it..as for the Dizzy Dust, well, it goes without saying it's a most excellent rub...I keep many of the DD and JH rubs around for use at all times...

Great looking ribs!!!! I'm going to try foil next time. How much liquid do you put in the foil with the ribs?
-
dunno I just eyeball it...maybe 1/4 cup for 2 racks? doesnt take much..just some to create steam if you seal them tight..careful when you remove and open!..hot liquid!
