T-rex Ribeye and maple planked brie

I did my first T-rex method and it's the only way I'll do it from now on. It's a lot easier to control the cook rather than the quick sear, shut egg down right away, etc. cook. Not to mention it was the best steak we've had off the Egg so far.
I used DP's Raising the Steaks seasoning for steaks with a little Kosher salt and cracked pepper. I actually did the 90 second sear in a cast iron skillet as I'm waiting for my cast iron grid to get in.
Also, did Maple planked brie which was a huge hit.

I've never had brie, but it's on the list of things to try. Do you eat it with good crackers? Toast points? -

The topping was: 6 to 8 garlic (chopped), 2 green onions (chopped), 1 red bell pepper (roasted,[eeled, seeded, and finely chopped), 1 jalapeno (chopeed and seeded), 2 tbsp thyme chopped, and 2 tbspbalsalmic vinegar, salt and pepper.
Preheat egg to 400
Scrape top off each wheel of brie
heat olive oil in pa and add the garlic cooking until softened not browned
Add all the other ingredients and saute for abotu 5 minutes-remove
Put maple plank on Egg for about 10 minutes
Put mixture on top of brie wheels and place on plank
close lid and cook for 8 to 10 minutes.
I wish I could say I created that but it all came from the original, small egg cookbook. I was lame and just served it with some big wheat thins and served it right off the plank. -
Not sure that was "lame" man!!
