Easy Fajitas!!!

In the neverending quest to make quick meals during the week that are also very good, I developed a fajita marinade that is really easy and extremely good. Here it is:[p]One whole flank steak
8 oz. lime juice (bottled)
Monteal Steak Seasoning
4 0z. Soy Sauce
Olive Oil[p]Marinate flank steak in lime juice overnight.
drain in the morning
Add Soy sauce and liberal amount of Montreal Steak Seasoning
When you are ready to fire up the BGE after you get home that evening, heat to 600 F and sear both sides for the obligatory 90 seconds. Reduce to 400 F and cook for an additional 3-4 minutes on each side. Mist w/ olive oil as needed. [p]Sour Cream, Cheese, Guacamole, Salsa all make fine condiments, Flour tortillas, and if you get ambitious, sautee onions in olive oil.[p]This can all be done in 30 minutes, and beats the livin' snot out of hamburger helper!!![p]mmmm mmmm GOOD!!

Sounds really good - it went in my recipe file. Refresh my memory though ... Do you cut into strips before cooking or after or does it matter?
