this past tuesday was our 8th anniversary 'gotcha day' for our son, sam, who came to us from Bulgaria when he was two years old. . .he is now a happy 10 year old 4th grader. . .we always do a little 'gotcha day' celebration to honor the day he hit the US (my wife actually got him on june 10th, but since i stayed home with sydney, the family wasn't all together until the 15th). . .so this year, we decided to do some traditional bulgarian dishes. . .we started with a 'chopsky' salad (basically lettuce, tomato, cucumber, carrots, peppers, tossed in balsamic vinager, then put in bowls and drizzled with olive oil and feta cheese), then rice with grilled Kebapcheta, which is as follows:[p]Kebapcheta
1 pd ground beef
1 pd ground pork
2 medium onions, chopped
1 tsp cumin
1 tsp black pepper
1 tsp salt
1/2 cup club soda (thats right, club soda)[p]mix it all together, shape into rissoles(looked like sausages), refrigerate for a couple of hours and grill till done. ..[p]i did ours on the egg at 400 degrees direct (like i'd do burgers). ..really tasty, and it made the day special for a certain young man. ..[p]
my boy - sam[p]
here are the rissoles all ready to go on the egg[p]

all ready to eat, with rice and the chopsky salad. . .

mad max beyond eggdome,[p]Nice! Sounds like my kind of dinner...... pork and beef as the main course.[p]My regards to y'all on your 8th anniversary..... let Sam know that I like his eggceptional taste in hats.[p]John

  • WooDoggies,
thanks john,. . .the pork and beef and cumin really make for a nice flavor (almost sausage like, but not quite) . . .not sure what the club soda does for it, but the bulgarian cookbook we have has a lot of recipes that call for club soda . go figure... [p]and yea, not sure why, but since sam first started watching football, he has been the biggest brett favre fan you can imagine (we are all redskins fans, but he loves green bay and brett).. .i even found an autographed picture of brett for him that has a special place in his bedroom. . .

  • FlaGal,
thanks. . .since we weren't there for his birth obviously, we have found 'gotcha day' to be a nice way to celebrate the importance of the day we adopted him. . . and i can tell you, watching him come through the doors from imigration at the airport was every bit the emotional thrill as watching our daughter being born. . .
