Halibut tonight

The Fresh Market grocery had halibut on sale, so I bought a pound and got good suggestions from the Forum, including a post from Nature Boy - Sea bass with Tequila cream sauce.
Tried it tonight and though I need some serious help with the sauce, the results were outstanding - Thanks, Chris !
Halibut coated with Raging River Rub, allowing it to melt in.

Got the large up to 450-500* elevated on the adjustable rig. Started with some asparagus coated with EVOO and Shaking the Tree rub. Also tried grilling some avocado with garlic pepper (gotta work on that one too):

Followed with the halibut:

Finished and topped with the sauce (which was too thick, but with incredible taste): --- (the "non-porno" money shot)

Plated:

The fish and sauce were wonderful. Definitely a "do-over".

Hey, Steven. Looked up the Canadian importer for La Bomba (Aurora) and found 2 stores in Vancouver that sell it. We will be passing through Vancouver both going and coming to Whistler in June. I think we will buy some for using while in Whistler and a bunch on the way home to pack for the flight from Seattle back to Mississippi. :woohoo: :woohoo: :woohoo:
Oh yeah, the avocado -
I searched the Forum for grilled avocado and found limited info. Thirdeye (I think) had a good pic and used garlic pepper on his. He had a dollop of a cucumber-type sauce in the hole.
I probably should have smeared it with some EVOO before the garlic pepper as it was dry and stuck to the grill somewhat. I didn't have a sauce for it, which I think would have been the "kicker". But, despite that, we both thought it was good!
More experimenting - can't be anything wrong with that!

Chris's email to me said Hatch made the sauce. It had the ingredients, but no measurements and I'm a very inexperienced sauce maker.
I finely minced one medium shallot and saute'd it in a small amount of EVOO. I then added 1/2 cup of tequila (the only measurement given). I reduced that until it was almost gone and the shallots were barely wet. I think added a tablespoon or so of heavy cream (had no idea how much to use), a squeeze of lime and 4 or 5 peppercorns and simmered. (It called for brined green peppercorns, but I called or visited 5-6 stores and couldn't find these, so I used just a few dried black ones). The sauce was very thick - probably too much shallot / liquid ratio, but the flavor was fantastic ! :woohoo: :woohoo:
Gonna order some of the brined peppercorns from Amazon so I can do this in the future for friends.
Any help on the sauce would be appreciated. I'm so OCD and a good recipe-follower, but without enough experience to make a good sauce with guess-work. :ohmy: -
Those guys have been a pain in the a$$ !! My local Kroger spent 6 months trying to place an order for a case for me. They wouldn't return calls, then other hassles. I have contacted other local retailers and nobody could get Greco Imports to ship anything.
I have again asked "The Fresh Market" to carry this in their stores (my niece works in the home office).
I will email Anne and see if she can give some advice. Thanks! -

That halibut was really good - very similar to Chilean Sea Bass.
It was "on sale" for $17.99 per pound.
In a restaurant, that $18.00 + meal would have run at least $100 per couple, including the sides, salad and wine. :ohmy: -

Checked the weather this morning and though it is a week away, they are predicting 13 mph winds and rain! At least it will be warm (mid 70's). I've made a check list and am already starting to pack - gotta carry lots of sh!$ ! :ohmy:
