Chili and Cornbread Pie

Opening the freezer, there it was ..... a quart of chili made a couple months back... and looking through the cupboards, there was fixins for cornbread.
I like cornbread with chili and having remembered seeing a recipe for combining the two, I thought I'd wing it.[p]I started up the egg, put in the platesetter feet down, let the temp steady at 350, set the skillet pie on the setter, closed the dome and let it cook for about an hour until the cornbread got nice and brown.[p]It turned out really well and I ate way too much.[p]
Chili and Cornbread Pie[p]Fill the bottom of a 12" cast iron skillet with about a quart of chili. [p]In a bowl mix:[p]~ 1/2 chopped onion
~ 1 14 oz. can creamed corn
~ about 1/2 cup of milk
~ 1 cup grated sharp cheddar cheese
~ dollop of mayo (no eggs and couldn't think what else to use)
~ about 1.5 cups of yellow cornmeal
~ 3 tsp baking powder[p]Mix well. Try to keep the mixture from getting too thick or too thin..... it should just pour out of the bowl.[p]Evenly pour over the chili and bake until brown on top.[p]Have a moment of silence for the greens, crack a PBR and eat.[p]John [p][p]

I think the ultimate would be to make Wailing Angus Beef's cornbread from Eggfest 04 on top of that there chili. Damn, it might be illegal to be so good![p]TNW

I can't tell from your photo - is the handle on your skillet cut off or can you fit it on your egg with the handle? I cut off the handle on a small 9" cast iron skillet specifically to make corn bread on my small - works great. My 12" skillet won't fit in my large, though, because of the handle and my wife isn't too keen on me cutting it off. Just wondered how you made it work.

SteveO,[p]The skillet I used is a #10, has it's handle and measures 16.5" from from end to end.
Because of the handle, the skillet does not set on the center of the platesetter .... to compensate for the part of the skillet that's getting hit by the direct heat, I placed the pizza stone on the setter, slightly off center, to protect the otherwise exposed skillet.... works purty good.[p]Yeah, this is a prized skillet.... probably older than me... aint no way I'm cutting the handle off to fit.[p]Happy cookin'

I booboo'd. In the recipe for the chili pie I wrote 1 quart of chili..... however now that I'm washing the dishes and looking at the container, it's more like 2 quarts.... or 1.75 quarts to be exact.... if it matters..... this kind of thing you just eyeball anyways.[p]Thanks for the complements.... I wish I could remember where I saw this recipe so's to give them credit for the idea.[p]Beers!
