Coolin' off for the dwell

I go nuclear when doing t-rex steaks, but have a hard time bringing the temp back down to 350-400* for the dwell. The BGE does so good a job at holding temps that it's hard to get it back down.[p]Any suggestions?

    You guys with your nuclear powered eggs. [p]Grill that steak on the gasser at 1,000° while your egg it coming up to 400°. [p]Then finish off in the egg at 400°. [p]Problem solved![p]You could just get some charcoal white hot in washtub and through the steaks on the coals. Hey don't laff it works!

    As long as you don't let the ceramic heat up too much, you should have no trouble getting the temp back to 400 degrees in the 20 minutes that you let the steaks rest. I've never had a problem.....

  • The Naked Whiz,[p]I bet that's it. I haven't been throwing the steaks on as soon as I hit 750* dome, so the ceramic has been taking a lot of heat and retaining it. I'll be ready next time and sear the steaks as soon as I reach temp. Thanks.[p]It's easy to overlook the obvious sometimes.
