i was doing some t-rex steaks the other night, and i had a particularly hot fire. . .i had started it almost an hour early to do the escargot, then took the plate setter out, and let it run up till the temp dial was off the guage. . .we were going nuclear. . .the steaks were nice 2inch thick bone in sirloins with a fair amount of fat, so as you can see, i got some great flaming action. . so, after all the great picture threads the other day. .. lets see everybody's best 'flame' pics. . .should be fun[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/DSCN0302.jpg>[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/DSCN0303.jpg>[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/DSCN0304.jpg>[p]after the flip[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/DSCN0306.jpg>[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/DSCN0307.jpg>[p]now, you might think i was turning these steaks into hockey pucks. ..but after exactly 2 minutes per side in the nuclear reactor, they got pulled to rest for 20 minutes, i brought the egg down to 400 degrees, then in to dwell for 6 minutes per side for the results below. . .right in the medium/medium rare range. . .tender and juicy as can be. .[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/DSCN0310.jpg>[p]

But, here's my searing pics - these were done with the Mini at 900 degrees. (By the way, those slices of steak look PERFECT!)[p][p][p][p][p]Don't you just love playing with fire?[p]TRex

while i normally sear with the dome down, and enjoy the smell of my burning arm hair when i open to flip and remove . . but i was having so much fun this time for those 4 minutes that i just went ahead and left it open. .. i don't know that it makes a whole lot of difference either way, and if you read t-rex, he has also done it both ways. .. .[p]btw, a big glove and long tongs were involved

mad max beyond eggdome,[p]sorry no flame pictures, I haven't gotten that far yet. Only had the Egg about a month. But I have to say, your pictures and your steaks are awesome! I read the T-rex method and was a little scared, but as soon as I get my hands on some nice thick steaks I'm going for it!

Pakak,[p]Yeah, the skinny little grocery store steak I had on hand yesterday was barely grill pan worthy. BTW, my hubby, FlaBoy, is getting into the Egg now too, I let him do some knockwurst on it this past weekend and they were yummy!

so long as you are careful about backflash (see naked whiz's site on this), its the ONLY way to do a steak (IMHO of course). .. .be bold, and go for it. ..you won't be sorry. . .

mad max beyond eggdome,[p]I go nuclear when doing t-rex steaks, but have a hard time bringing the temp back down to @ 400* for the dwell. The BGE just does so good a job at holding temps that it's hard to get it back down.[p]Any suggestions?

A while back I attempted blackened salmon. This is a shot moments after the butter covered salmon went into a 12-inch cast-iron skillet that had been heating on the nuclear hot grill for about 30 minutes. Needless to say, after only two minutes/side it was burned to a crisp. Chef Paul, says the fire can't be too hot for blackening ... he's never done it on a Egg.[p]BTW, this experiment cracked both the fire box and the fire ring, created permanent "bubbles" on the porcelain grate, destroyed the gasket, and I ended up wet-sanding the skillet to get it clean.

very cool picture! thanks for sharing. . .i've used a cast iron pan in the egg to do a trex variation, very good stuff. . .can't say i experienced your problems though, thankfullly. ..

the trick is not to stay at 750+ for any longer than necessary. . .after the sear, if i shut the vents almost completely, it is usually back down to 400 within about 15 - 20 minutes with no problem. . .sometimes i open the dome every five minutes or so (very carefully mind you) to release some heat, but otherwise, not problem. ..
