Reverse ABT

Thanks to Ray S below regarding his pickled jalapeno pork butt post, I have decided to try something new on my mini tomorrow. I wanted to see what everyone thought and add any ideas or suggestions. This is it....Take a pork loin stuff it with ABT ingredients. ( Cream cheese, fresh jalapenos, little sausages, a touch of rub maybe.) Then I would tie it, rub it with a rub of somesort, then wrap in bacon. A reverse ABT. Do you think this would work? Any suggestions? I am going to buy the stuff today and try it tomorrow, served with cheesy potatoes. Has anyone done this before? --Angie2B

    never tried it before, but it sure sounds good!. ..my only suggestion might be to roast the jalapenos first, to soften them up a little bit. .. might be a little crunchy otherwise (you might like that though). ..anyway, just a thought. ..

    Angie2B,[p]I've seen a recipe for a cream cheese and jalepeno stuffed pork tenderloin here before, and it got rave reviews. I can't find it to link to it at the moment, but will keep looking...can't remember who posted it...[p]Tonia

    Once I substituted poblano peppers for jalepenos - stuffed them with the queso blanco and the mexican 4 cheese blend with rotele - blended that together with some pulled pork and stuffed - wrapped with bacon and had tremendous chile rellenos (just with poblanos). Reason I'm telling you this is that you might want to consider your options of cheese and peppers when making your reverse abt. It sounds like a knoble (and tasty) effort.     Chet,[p]Feta cheese might be a good option. I often do a really nice beef tenderloin suffed with spinach, Feta cheese and garlic. It comes out really nice.[p]
