Pickled Jalapeno Stuffed Pork Butt

I’ve read a few articles lately regarding, pickled jalapeno stuffed pork butt. The jalapenos are supposed to tenderize the pork as it cooks. Has anyone ever heard of or tried this method? [p]RayS

    we often make what we call chow chow, which is merely hot peppers ground up with or without onions and garlic, placed in mason jars, and filled with hot vinegar and a teaspoon of salt. This is usually a tableside condiment, but many people like to stuff pot roasts, chicken, turkey, briskets, even potatoes. The vinegar is what is tenderizing the meat and adds much flavor to your cooked foods. HTH

    Ooooh...... it could be like a reverse ABT .....use fresh Jalapenos and cream cheese to stuff, maybe split some little sausages. That would be good I bet. I'm going to try it. Thanks.
