Broccoli slaw for Pulled Pork/Chicken

I'd like to give y'all my recipe for using up broccoli stems and making a slaw that I personally can't stop eating. The fact that it's good for you is beside the point. A food processor is good for this recipe.

Broccoli Slaw in Pomegranate Dressing

3-4 stems broccoli
2 carrots
1 good eating apple (ie Braeburn, Granny)
1 tbs light olive oil or good salad oil
2 tbs Champagne Pomegranate Vinegar
1/4 cup dried cranberries
optional: slivered almonds

Method
Shred carrots and broccoli. (you can use whole broccoli but the florets make little specks that stick in the teeth. FYI)
Shred apple
Toss with cranberries and dress with oil and the fruit vinegar.

Very nice presented on thin apple slices slice horizontally but this is just a frill.

For the pomegranate vinegar, I get mine here http://www.amazon.com/exec/obidos/asin/B0000EZUPG/19fnb00ma709-20
