Bless you whoever you are. I just made the rub and if that's any indication of what's to come I can't wait till tonight! That Red Eye sauce looks great too. I'll make that up a little later.

    Sundown,[p]I think it was either NB (Nature boy) or Qbabe. NB (actually Dizzy Pig) has a great rub that is Coffee-infused. I used it on Lamb lollipops (Rack of Lamb last night). Mmmmmm, good! We've been eating a lot of lamb lately.[p]Smokey

    Hi Smokey, Have you done lamb chops yet? I usually broil them, but I would love to try them on the egg.

    Kris in FL,[p]Yup! Do em just like steaks. Sear at 700+ degrees for 2 minutes per side, then dwell for 5 to 6 to medium rare. The dizzy pig rug is still a favorite, but Rosemary and garlic are great too!

    Yes it was Qbabe and here it is...[p]Coffee-Crusted Pork Tenderloins With Redeye Barbecue Sauce
    Ingredients1 1/2 - 2 lbs pork tenderloinThe Rub3 Tbs ground coffee1 Tbs coarse salt (kosher or sea)1 Tbs dark brown sugar2 tsp sweet paprika1 tsp freshly ground black pepper1 tsp garlic powder1 tsp onion powder1/2 tsp ground cumin1/2 tsp ground coriander1/2 tsp unsweetened cocoa powder2 Tbs canola oilThe Sauce1 Tbs butter1 slice bacon, finely chopped1/2 medium onion, finely chopped1 clove garlic, minced3/4 cup brewed strong coffee or espresso3/4 cup ketchup1/4 cup Worcestershire sauce1/4 cup heavy whipping cream2 Tbs Dijon mustard2 Tbs molasses2 Tbs brown sugarCoarse salt (kosher or sea) and freshly ground black pepper, to taste
    Procedure
    The Rub
    In a small bowl, mix together the coffee, salt, brown sugar, paprika, black pepper, garlic and onion powders, cumin, coriander, and cocoa.
    Sprinkle the rub on the tenderloins.
    Drizzle the oil over the tenderloins and rub it in well.
    Wrap in Saran Wrap and let sit at least 4 hrs but overnight is better.
    Meanwhile, make the sauce.
    Melt the butter in a heavy saucepan over medium heat.
    Add the bacon, onion, and garlic and cook until lightly browned, about 3 minutes.
    Stir in the coffee, ketchup, Worcestershire sauce, cream, mustard, molasses, and brown sugar and let the mixture gradually come to a boil.
    Reduce heat slightly and let the sauce simmer until thick and richly flavored, about 10-15 minutes, whisking from time to time.
    Season with salt and pepper to taste.
    You can serve the sauce hot or at room temperature.

    quick question for you as I also use coffee in a couple of my favorite recipes, but both of mine use instant coffee - is that what you meant or was it ground coffee...or does it even matter?

    RRP,[p]It's fresh ground coffee and I think it does matter. The instant stuff just doesn't have the same rich flavour.[p]Tonia
