Redfish on the halfshell & eggplant pizzas

Fired up the egg tonight for some simple fish and veggies. Did more redfish on the halfshell, basted with a little sauce I threw together consisting of dijon mustard, butter, lemon juice, lemon zest, garlic, dill, & just a touch of cayenne pepper. Eggplant pizzas were just eggplant sliced in 1/2" thick slices, grilled, then topped with sundried tomato pesto and fresh mozzerella. The pearls of mozzerella look like marshmallows before they're melted

Came out pretty good.

Fresh redfish, or are you cleaning out the freezer getting ready for the Spring fishing season?

We are booked in Grand Isle on May 15-16. Hope to interrupt the migration of a few Cobia offshore, then finish off with specks and redfish in the marsh. :woohoo: :woohoo:

Those were a few that a friend dropped off a week or so ago. I'm hoping to get in a little surf fishing in Grand Isle late April or early May. Usually have some big specks hanging around the beaches then.

Hmmm... The eggplant looks interesting. I'll have to try that one of these days.
