OK the guy at the wood place has the bark on his chunks and he syas that's were the flavor comes from. Everything I have read says take the bark off cause it makes the smoke bitter. So which is right here bark on or bark off? Anyone have any experience here?

tach18k, I'm ONLY refering to the bark from "Shag Bark Hiskory", I've not tried any of the other hickorys.
