    im thinking no meat as a reprieve after the meatfull weekend ;) ill work the fish in during the week and weekends ;)

  • My wife HATES me when I bring those home; makes me sleep downstairs on the couch and still b*tches about the smell :sick: in the house. :laugh: Usually ready the last two weeks of April - first week of May here. Local kids still get sent home from school and I only eat them on Friday & Saturday nights. :silly:

    WW, I suspect that's not the real reason your wife makes you sleep on the couch, lol. But it is a convenient excuse! :lol:

    Arancini? You can make them with leftover risotto, with a cube of mozzarella hidden in the middle that melts with oozing deliciousness when you cut into it.

    I also use leftover risotto to make risotto cakes - form into a patty then press into a mixture of panko and parmesan, then pan fry in a lightly oiled skillet until GB&D on both sides.

    I have to admit that I make my risotto in a pressure cooker. For years I did it with the constant stirring method, but in just 6 minutes on high pressure the texture comes out better than any long, low stirred version I've ever done.
