Smoked Smoked Sausage

For a simple cook tonight I thought I would try some Cavanaugh Smoked Sausage that I picked up at Sam's.
Being pre cooked this was sort of a no brainer. I lit the egg, added some whiskey barrel chips for smoke, set the grid raised and brought it up to about 400º.
I turned them frequently, about every 2 or 3 minutes, and after about 10 minutes applied a light coating of Sonny's Sweet Sauce and turned them a couple more times to cook the sauce.
The finished heart attack . . .
The cook was good, the sausage was salty but not bad. They were about 140º internal when I pulled them.

That's one of my favorite quick-n-easy cooks.
I like to hit the sausages with a good coat of rub before I cook them to get a good crunchy/spicy crust too. I slice the casings like you did too. Good eats. -

I am going to try your rub idea, that sounds good. I have always sliced the casings, I like the texture and if any fat melts and runs out at nine calories a gram it can only be for the good.
Actually not much fat runs out and they hold the sauce better, I think.

Thanks, I like sausage A LOT also. I may have to try smoking some homemade. My problem is that I shouldn't be eating it AT ALL! LOL. I quit smoking tobacco almost a year ago and have put on at least 40 pounds.
When I have lost about 60 pounds I will allow myself the luxury of homemade sausage. :laugh:

Good luck!! If you can quit the smoke you can loose the pounds!! Get a bicycle. It'll make you feel like a kid. While loosing pounds you are one with nature. The smells of nature are terrific!!Molly

I have had that, pretty good stuff. Slice those baby up and put in some Carinvore Sweet Suace in a aluminum pan for about 30 minutes to warm up. WOW!

I may resurrect my bike Molly, I used to ride a lot but took a bad fall and mangled my knee. I need to work on my diet and that's not easy. When you live alone discipline is tough. :(

I can't say that I've ever had the notion to slice them before smoking, but now that I see it, I can't imagine not doing it. Beauties there, Gator.

Good for you for quitting smoking, I smoked 3 packs a day for well over 20 years unless I was drinking, then I smoked more. Tried quitting many times over the years and finally did it. Best thing I ever did for myself. I'd rather have the weight than the urge to smoke. -RP

I don't know where the slicing comes from, I would never do it to a Bratwurst, you would loose all the great juices. It's funny how we come up with some of our habits/ideas.

Thanks AZRP, it was one of the great challenges of my life. I had smoked about 2 packs a day for about 42 years. I know what you mean about smoking and drinking, LOL. Drinking was easy to quit, the hangovers were killing me. Smoking just got to expensive, at almost $50 a carton it was getting to be the most expensive portion of my limited budget and I had nothing to show for it. If prices reverted to what they were when I started, 15 cents a pack in New Hampshire, I would start up again in a second. I think I'm safe! :laugh:
