!st Time Steak Question (Please)

Hi Everyone,

Going to do my first steak on the egg, I have seen two different methods, 1st one get egg up to 650 turn steaks 3 mins close damper and let them cook the other is sear them take them off then put them back on after 15 minutes? My sister likes her dead mine is med rare the right way. They are 1 inch ribeyes. Help please. I have had my egg about a year and never have done steak. Dad could not eat steak anymore so we did not cook steak. Thank you in advance.

    A 1 inch steak is too thin to trex or REALLY sear.I would suggest cooking at 450 til desired doneness.125-130 for med rare,the other don't matter it's gonna be cremated. ;) Let rest about 5 mins before slicing.Remember you can always toss em back on for a minute or two but NO ONE can UNCOOK anything! :) Good Luck!

    Patti you can cook at 500 ,sear for 1min flip sear for 1min then remove.Drop temp to 400 and 1min each side dhould be med rare.

  • i wouldn't do the "dwell" method (the first one) with ribeyes. the fat drips and the smoke had no place to go with vents shut.

    with steaks that thin i'd suggest simply grilling directly like you are used to, flipping once or twice.

    can't really tell you how long to do it in order to reach certain levels of doneness, because there are a lot of variables.

    i'd suggest sprinkling a little kosher salt on them, let them sit out a while (an hour or so)and then grilling that way. they are thin enough that they will warm up a bit sitting out, and just grilling them will be enough (and simpler) than a few of the other methods.

    take them off when yours is the way you like and. zap hers in the microwave for a minute on high after that. if she likes it overcooked, there's no reason to just microwave hers the rest of the way. won't affect flavor or anything. it's all that steak deserves anyway. hahaha
