playing with temp. pizza,??

I was playing with the egg temps, between cooks, and with the daisy wheel on the temp wouldn"t get over 400deg. with it off it shot up over 600deg.

Now for my question, do you cook your pizza's with the daisy wheel off? And if so, how do you control a 500deg. temp? when i tried to maintain 600deg. it kept going up and down, when i put the top back on the temp dropped back to 400.

I haven"t done my first pizza yet, but i sure would like to know. Everything was clean and fresh lump put in. thanks in advance..

    i can get to well over 400 with my daisey wheel on. it does slide open also.. if you have the slide all the way open and you are not above 400 then open your bottom vent..

    I don't cook with a top on when doing pizza... I just use the bottom vent to control temp... unless I'm doing a cook that requires me to be below 350, no top.

    i did not think of this the other day but if you look into the bottom vent and your bowl is not ligned up right you will have air flow problems that will cause temprature problems...


    just thought of that today ;)
