Finally getting a chance to Egg, couple questions?

Indirect at 250?[p]2. Flank steak here is not to pricey for the lean cut it is. Has anyone ever tried it for jerky?[p]3. I have been eggsperimenting with BBQ beans. The last batch I made a shaved off the meat of a half slab of spare ribs. Anyone else try this or add some form of meat? I have also tried smoked ham chunks and shredded brisket.

Car Wash Mike, I did a beef roast (think it was a pot roast - whatver - it was the cheapest I could find). Cooked it just like the pork butts but I put some bacon on top. Don't know if I needed to or not but it turned out good. Also, the bacon is delicious. Do it overnight so you can steal the bacon in the morning for breakfast.

Rump roast will work for sandwiches just fine. Sliced thin. I seasoned my last one with olive oil and my favorite seasonings...also coated it with chopped fresh garlic. I cooked direct at 250 for maybe 3 hours. Internal maybe 170? I think coating with mustard would be fine. Indirect would work. What could it possibly hurt? ;> I also make an au jus by boiling leftover/trimmings of steak/beef/pork/chicken bones (any leftover bones are great, they are already flavored) onions, chopped mushrooms, garlic, and seasonings. (add a little bbq sauce in the end) Mix this up with the meat after it's sliced. [p]I prefer chuck steak for this. It has a higher fat content.[p]My dad used flank steak on his jerky. Worked just fine. [p]I like to add pulled pork, cilantro, and onions to my beans. (I freeze leftover pulled pork and just pull a few chunks out of the bag when we make beans...throw it in frozen and it works real nice) Honey, molasses, or brown sugar ain't a bad addition either![p]Mike in MN

Thanks, Mike[p]I think I'll do indirect.
The flank steak looked perfect too me for jerky, so lean.
I put molasses, onions, bbq sauce, brown sugar, and even rubs in my beans. I like to smoke and have a thick not running style of bbq beans.[p]CWM

The idea of bacon never ever crossed my mind. Thanks for the suggestion. Between you and Mike in MN, I think I'll have some darn good bbq beef sandwiches.[p]CWM
