Tilapia

I've never done Tilapia, but Momma says we've got to eat more fish. She's at a birthday party tonight so I'm having Raspberry Chipotle/ Balsamic pork chops. Anyway, I was wondering if anyone has a favorite way of fixing Talipia on the Egg.[p]Thanks,[p]Mike

    Wrap in foil (loose) with some butter and lemon. It'll taste fine. Who cares if it doesn't. Smarty lost.

    Tilapia is great when cooked direct on the grill hot and fast, and seared on both sides until the rub is browned and sizzling. 700 would be a good temp. But it all depends on what you have to work with. Thick fresh filets with no gaping cook up real nice right on the grate....with one careful flip. Thin, wimpy filets will surely need to go on some kind of oiled fish grate....but the same theory....hot and fast. Anything over 5 minutes a side and you are not cooking hot enough.[p]I have a bias on what rub I would use, but why not just salt and pepper them (or some lemon pepper or raging river), and use the same raspberry chipotle sauce you use on the chops??[p]Have fun, and let us know what you do!

    We make Tilapia all the time... one of our favorites is the raging river / maple butter combo. Great stuff... I cook them 3 min a side at 400-450, matbe a touch longer for thicker filets. Oh and do try to get the thicker / larger filets. I find that the smaller pieces break up way to easily in fact I would use a basket of some sort if the pieces are much smaller than your hand and thinner than 1/2 of an inch.[p]Cheers, [p]Brian
