Here is my Chili Recipe, hardest part is the chopping and cutting


Cpt’n Cook’s 4 Bell Chili

3lb. Hamburg
1 ½ lbs. Beef, cut in small cubes
1 lb. Pork, cut in small cubes
1 lb, Hot Italian Sausage, either bulk or squeezed out of casings
3 Large onions, chopped. I like to leave ¼ onion in long strips for variety
6-8 Garlic cloves, chopped
1 Bell Pepper, chopped. Hot peppers optional
2-28oz.cans concentrated crushed Tomatoes
2-28oz. peeled Tomatoes
4 Tbsps Chili Powder
2 Tbsps Black Pepper
1 tbsp Cumin
¾ Tbsp Cayenne Pepper
1 tsp Liquid Smoke
Tobasco to taste
8 oz. Burgundy or any other red wine

Brown all meat in a cast iron frying pan separately and add to 6 ½ qt. enameled dutch oven.
Add the rest of the ingredients and simmer for several hours.

Makes approx 6 ½ qts

Goes great on Pearl Hot dogs or with corn bread

Adding any kind of Beans will get you "Drawn and Quartered" and added to the next batch of chili

    WOW! That's lot of chili!! I'm gonna need a bigger boat. :lol: I think the largest DO I have is about 5 qts, Thanks, Cpt'n!

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I use a 9 quart for chili, gumbo and stews on my large. Great combo.
