Baby Backs are on!

In anticipation of this wonderful 50 degree temp weekend, I picked up a few racks of baby backs yesterday.

I seasoned them with a modified version of Wess's rib recipe.

The telephone's been ringing off the hook since we woke up this morning with friends wanting to get together today. You'd think the Tiki Bar was opened.

I know it's Sunday and I'm feeling pretty religious during lent, but I just can't make two racks of ribs stretch to feed the masses.

Good thing I picked up some birshire pork and some porterhouse steaks at the butcher yesterday. My wife picked up some light rye bread dough at the local baker so we'll be making some pork in bread dough.

Maybe I should unplug the phone so I don't have to fire up those steaks.

Nah, once a carnivore, always a carnivore - maybe I should fire up everything !

BTW - I saw my first bee this season - I don't remember
seeing a bee this early before.

    Go for it. Norma checked the flight for Thursday and it is full so it is unlikely it will be cancelled. Pat said he would come to the airport along with the hotel van so we should be good to go.

    That's the 1500 hrs flight now right? Well, OK !

    I wish they hadn't cancelled the 1100 hrs flight.

    That Pat is such a nice guy - making sure there's a shuttle (Egg head limo) there for us. He must think we're going to start drinking on the plane. Ha! Ha!

    BTW - I took my Christmas lights down - did you?

    I hear ya Michael!

    I also wanted to do some ribs, but its going to be a nice pork tenderloin and some chicken! Gotta get back to basics after a long winter :laugh:

    UNBELIEVABLE!!! I tell ya - I had the whole week off but was stuck doing some painting and putting up some wallpaper - Can't wait to get back to work to rest :lol:

    I'm planning a kitchen reno and I need a painter.

    Can I temp you with some egg'n and 24's? Do they still make Brador? If they do I'll get some of that. Ha! Ha!

    The baby backs have been on for almost 3 hours now - and they smell great.

    According to the recipe, now it's time to foil them. I've never done that before - wish me luck!

    Hey Michael, I can smell your ribs across the lake too, what time is dinner? Just lighted my large to cook char siu that has been marinated overnight, it's my second time, still experimenting. Also got some souvlaki cut up but no energy to marinate/cook it after spending hours on the stoker extension project.

    Looks like all BGE owners are firing up their eggs to enjoy the weather.

    I just foiled my baby backs at about 3:30 they smell so good. These are Farmland extra meaty baby backs so i think im gonna leave em foiled for about a hour and a half. then unfoil and back on for another hour or so.

    I have some Stubbs original sauce and some Stubbs honey Pecan im gonna sauce with

    Cant wait for dinner time :)

    These last two low temp cooks ive done I have nailed it at 250 degrees both times I think im getting a hang of this temp control better now

    I have some Stubbs and some Ted Reader's - I'm debating which sauce to put on.

    Maybe a differnt sauce for each rack?

    Thats what i did. I really like having different flavors . Stubbs original has a little spice to it. While the Honey Pecan is sweet and tasty
