First Boston Butt - SUCCESS!

My first Boston Butt was a success. (7.5 lbs won it in a bet). I put it on at 12:45 am Sunday night with the plan to eat at 4:30 on Monday. I wanted the temp to be at 250 or so but it stabilized at 300. I got up at 7:00, and adjusted the settings to get the temp to 225 and it stayed there until 3:00 with no intervention from me. I then got the temp to 350 for the last 45 minutes. Took off the butt at 3:45, covered it with foil and put some corn, still in the husk but cleaned, on for about 30-35 minutes. Took that off and then put on a big apple crisp for dessert.

The butt was great. I was concerned that after 15 hours it would be dry but it was really moist and juicy. Made some homemade BBQ sauce (great recipe I have) an we ate the whole 7.5 butt along with some hotdogs and burgers off my Weber. All in all, I was very pleased. I just got my egg at the Waldorf Eggfest in May but have already created some great meals. I love it!
