Does he ever get to the cooking of the pork? I've search every where and can't find it. Just finished my pork and was a little disappointed. Used his rub recipe and found it to be a little too spicy. Liked the smoke but will try to use less mesquite and more apple and pecan

Mesquite is a very strong wood flavor and will almost always overpower pork and poultry IMHO. Hickory is the most popular choice for pork, but pecan and oak work well, too. Elder's rub isn't super spicy, so I think you are getting some of the harsh taste from the mesquite in there, too.[p]Frosty Ones,

greggor'spigstye,[p]There is no part 3. And, spicy is subjective. No one does anything the same as another in this forum. I have to say alsmost everything should be viewed as a guideline. Then make changes to suit your tastes.
Stay with it. BTW hickory is the best for pulled pork.
