Had some chicken breasts in my attempt to start a healthier diet.
So I made some duxelles in butter

Added some healthy herbs

Flambeed in some low cal brandy

Rubbed the breasts with olive oil and Dizzy Dust and tossed on the egg at 400*

Pulled the breasts at average 125*

Rolled out and cut the low carb puff pastry and added the duxelles

Set the breasts on the duxelles

Finished four and egg washed with a little butter..low everything by the way

On to the egg indirect

Off the egg after about 25 minutes

On to the plate over a sauce made of reduced chicken stock, gourmet cream of mushroom soup (low fat) mushrooms sauteed in butter, and low cal full cream
