Chicken & Chutney Sausage on Homemade Ciabatta

I have not been able to pull the trigger and start making sausage, but I did the next best thing....

We have a new store/restaurant/catering service and the guy makes all his own sausage and he will make custom orders as well.

I have a favorite recipe for Chicken Chutney Burgers that I thought would be both good and convenient, if I could have it on hand in sausage links, so I had him make me five pounds and I had my first sample tonight (recipe attached at the end).

I grilled the sausage direct, on a raised grate, with some apple wood to get it happy. I sliced the sausage and put it on some of the ciabatta that I made yesterday (smeared with butter an pan toasted), along with some of the chutney sauce, slices of red onion and spinach. It was fine, fine, fine!!

The idea for the sausage was based on this recipe for chicken chutney burgers.

Chicken Chutney Burgers
From: Gina Verlage

¾ lb. ground chicken
2/3 C Major Gray chutney
1 ½ T lime juice
1 T Dijon mustard
¼ C green onion chopped
½ t ground cumin

Hamburger buns, red onion slices, spinach or lettuce leaves

1. Combine chutney, lime juice, and mustard in a blender and blend until smooth; set aside 2/3 of the mixture.

2. Mix 1/3 of the chutney mixture with the chicken, green onion, and cumin. Broil or fry.

3. Meanwhile heat bread and spread one side of each bun with reserved chutney mix.

4. Separate onion into rings and serve as a garnish with the lettuce.

NOTE: I add about ¼ cup bread crumbs to the chicken mixture to help hold the mixture together as it cooks. Also, I find it better to let the mixture set for 10 - 15 minutes before forming burgers.


Here is the modification to make 5 pounds of sausage

Chicken Chutney Sausage


5 lb. ground chicken

18 ounces (2 jars) Major Gray, mango chutney
3 Tbsp (44 grams) lime juice
3 Tbsp Dijon mustard
1 Tbsp + 1 tsp ground cumin

2 C green onion chopped (white and firm green parts)

Blend chutney, line juice, mustard and cumin to break down the chunks of mango and blend distribute seasonings.

Mix the chutney sauce with ground chicken and green onion.

    First I gotta say that I have no weakness for chocolate or sweets. It is sausage! Oh, a great bread really turns my head also. Spinich too,I wish you would have called me for lunch. That looks terrific!!
