I've got some amberjack fillets, can anyone give me a hint on the best way to fix these.

    SuperDave, hope I'm not too late. I like to egg them @ 300-350, cover with olive oil, salt/pepper or favorite rub. Egg for appx. 20-30 min. or when begin to flake. Try a very lite layer of bbq sauce or finishing sauce. Enjoy![p]DK
