Lost 2 degrees on Boston Butt

The butt has been on since 5:20am, 7 hrs into it. Dome has been at 200-210. In the last 20 minutes the internal temp on the butt has fallen from 150 down to 148. Should I be worried?

No but you should get your temp up to 250*. It may be hiting the "plateau" and it is not uncommon for temps to drop a couple of degrees.

NO.....it's in the plateau and it's not uncommon for the internal temp to drop....I would highy recommend you get the dome temp up to around 250° at the temps you are running the cooking grid temp is most likely only 180-190° ,,It'll never reach 200° internal like that...I try to cook butts at around 235 gris temp which is roughly 250 dome....

just understand that if you want a final temp of 195-200 in the meat, and the dome says 200, the grate temp is more like 195-190. you can't get the meat to a higher temp than the environment it is in. -
