Vidalia onions, again

I suddenly have 9 coming for dinner tonight. That's what happens when people find out that husband Steve has a brisket cooking! My best back-up plan for this time of year is a Vidalia onion casserole. Plan on 1 onion per person and follow these simple instructions:
Slice onions and saute in some butter until soft. Season, then layer them, in two or three layers, with Ritz Crackers, crumbled, & Parmesan cheese in an Egg-proof casserole. I use a cast iron chicken fryer. Cook until brown on top. People love it and it's quick and easy for a crowd.
