I don't see any reason to, whatever the result. Low and slow is for knarly pieces of meat that are filled with connective tissue. Leg of lamb isn't like that. Leg of lamb will usually be tender and moist regardless of what you do to it, as it is pretty forgiving. I'd roast it in the egg the you would in the oven.
