Salmon Side Dish Help
Squeeze
Posts: 717
OK, so my birthday is this Friday (shameless plug, send gifts or money or spices please...lol) and I have volunteered to cook for my Summer RA Staff for the last day of their training because I am such a nice guy. In a poll taken today the all said they wanted Salmon (surprised the heck out of me) so I said ok, I have a great recipe (enter the Maple Butter Salmon a-la Dizzy Pig). My only hangup now is what do I do for a side dish or two? I will be feeding 9 people so it will need to be semi easy. Any help will be very much appreciated. Thanks![p]-Kevin

Squeeze, I enjoy mushrooms, broccoli, asparagus, cauliflower (South Beach Surprise Potatoes are great) but not sure if they will. You could keep it simple with a bean salad, sliced tomatoes and a baked potato.

Squeeze,
here was monday's dinner. ..ragin river salmon, baked potatoe, salad and watermellon. . .doesn't get much better, or easier, than that. ...[p]enjoy[p]<img src=http://img73.photobucket.com/albums/v221/madmax521/DSCN0271.jpg>

You know, I think you are right, simple is better. That looks great. Thanks!

Squeeze,
btw. .. happy birthday to you. . .also, one good trick for salmon is to slice up a bunch of lemons, lay the lemons all over your grid, and cook the salmon on top of them. . .prevents the salmon from stickig to the grid, and adds taste/moisture. ..[p]best[p]max
