Tandoori Chicken

Anyone have a way to make authentic tandoori chicken? I like the stuff in restaurants that have a deep red color. Anyone have any suggestions how to do this and what spices to use?

I'v done it before, and although i don't have the specifics right now, it calls for good yogurt, fresh ginger, garahm masala spice, cumin, and corriander. Let it marinate overnight or longer. But the real secret for that dark red color is red food coloring- i kid you not- thats really it!. Then cook it indirect in a blazingly hot egg. Real Tandoors are about 700-800 degrees.

Wow! Thanks everyone .....food coloring.....who would have thunk it! I thought it was an exotic spice. Good qing! ( I gotta go check this turkey breast I crammed into my mini.)

A few months back in England there was a big uproar about premixed tandoori spice having an illegal dye in it. Supposedly the dye was a carcinogen. I think that happened here in the States many years ago as well. Red Dye # ?[p]Steve

yep, that was Red Dye #2...remember how paranoid everyone was? They even quit making red M&Ms. I had to join a group that was called "Bring Back the Red M&M" to get hershey's to do it. jeez
