Second cook on the egg

Last night I decided to try some more spatchcock chicken on the BGE. Again I rubbed with Hoochie Mama & finished with SuckleBusters spicy peach BBQ sauce. This time I cooked some baked potatoes on the egg too and they were fantastic.

One thing about cooking on the BGE is that they really do help retain moisture in the meat. I grilled direct at 375° dome temperature with the grate sitting on the fire ring and when I first checked the internal temp with my thermapen I was getting nearly 178° in the breast, yet the meat was still as moist as could be when it was served.

Funny thing is I can still smell the fantastic aroma coming out of the egg as it was cooking :)
