Second cook on the egg

Last night I decided to try some more spatchcock chicken on the BGE. Again I rubbed with Hoochie Mama & finished with SuckleBusters spicy peach BBQ sauce. This time I cooked some baked potatoes on the egg too and they were fantastic.
One thing about cooking on the BGE is that they really do help retain moisture in the meat. I grilled direct at 375° dome temperature with the grate sitting on the fire ring and when I first checked the internal temp with my thermapen I was getting nearly 178° in the breast, yet the meat was still as moist as could be when it was served.

Funny thing is I can still smell the fantastic aroma coming out of the egg as it was cooking

Looks great. You may want to go to ceramicgrillstore.com and look at some of their grill extenders and accessories. It gets the meat a little further from the fire. But your meal looked awesome. Welcome to the club

I agree with Bob. Look into a system that will move the food higher. The AR is very nice.

Yeah, I'm definitely getting the AR as I need the flexiblity it offers for other types of cooks.
