Drizzle with EVOO, salt & pepper to taste, and grill direct. Easy peasy.
I've driven through your fair city about 60 times on the way to Holden Beach or Ocean Isle. Been vacationing there since I was about 14.

Thanks Mark, I'll give it a try. Stop in Wilmington anytime, I do fishing charters. Just drop me a line. Capt. Rich -
When you are doing the potatoes you could do Asparagus like the pic
Par boil Asparagus for 1 minute, wrap with bacon and cook till crispy (indirect) while the taters are browning. Go back direct, open the airvent, and T-Rex those steaks!! :woohoo: -
You have mail.

EVOO, lemon pepper, kosher salt. Light and yummy.
Be sure not to overcook the asparagus. It only takes a few minutes to get warm. Overcook and it will get mushy. You can probably cook it while your steaks are resting. -
I did some wrapped in thin sliced pancetta last week, and they turned out killer..
Otherwise i usually marinate them in evoo, salt/pepper, and minced garlic, for like 10-20min, then grill them.. -
I do mine with S&P EVOO Cook then finish off with a Balsamic Glaze Drizzle lightly over it.
-
My wife and I like them with EVOO and Adobo.
-
Same as many here - drizzle with lime juice, EVOO, S&P. Then grill on main grid direct at 400º for 7-8 minutes, depending on size of asparagus.
When I put them on the grid, I pile them about 2-3 deep and just make a mound of asparagus. The bottom ones get a touch of char, and they come out lightly smokey and a bit crunchy.
Asparagus on the Egg is great!

I'm with the "drizzle with oil, season and grill direct" group. For ease in grilling, I like to make "rafts" by spearing (forgive the pun) four or five of them together at the top and the bottom with toothpicks. That way they're easy to flip on the grill.

Nice Fish Mark. It always happens the big one is caught just before, or just after the tournament. Capt. Rich
