Cinco De Mayo Fajitas

I posted the recipe that I used for Friday night’s Cinco de Mayo Party. The total count on the people feed was six adults and three kids and there was still enough left over for KennyG and I to have some the next day. The amount of meat used was a two-thirds pound Skirt Steak and two boneless, skinless chicken breasts.[p]The recipe for the chicken was embarrassingly simple. Sprinkle the chicken with fresh limejuice and salt and then grill. That came from one of my back issues of Chile Pepper Magazine (August 1999). [p]The rice was made by my wife and came from the same article. It was called Burrito Rice. Basically, it was tomato and onion cooked in the rice.[p]Enjoy,
