Turkey Wood?

Looks like my pecan wont be delivered in time for my turkey cook. I have cherry, hickory, applewood, and mesquite. What would you guys suggest?

I personally would stay away from the mesquite as poultry tends to really absorb the smoke and I think it would overpower it. I haven't done a large bird on my egg yet but for me I think it would pick up plenty of flavor without using wood at all. If you have to go that route I would probably go with the apple.

I would recommend you go very light with wood chips for a turkey cook. Don't know why but a turkey can take on too much smoke and get kind of nasty. I don't use any wood with turkey any more after a bad experience. The lump alone imparts a nice mild smoky taste.

Cherry or apple or both(light). Hickory and Mesquite are too strong for my tastes, when it comes to turkey. HTH.

I vote for cherry or apple or some of both! And one more thing - at the same time throw a big ol' onion on the coals - it will burn up and impart a wonderful light taste, let alone drive ya crazy from the smell during the cook.Re-gasketing the USA one yard at a time!

Another vote for cherry or apple, both in moderation, and I love the onion idea, gotta try that one myself :P !

Cherry and go light, poultry soaks up a bunch of smoke flavor.

Apple or cherry. They have similar tastes, but cherry tends to give the meat a darker color. A cherry smoked turkey would look really nice.

Apple or Cherry work very well...
I also did one once with Mesquite. That too was good, but a litter smoke (I think) is better.
