Boston Butt cooking time

Hey All,[p]I cooked a small 3 1/2 pound butt last night dome temp 300 polder grill temp reading avg 245 and the meat temp only reached 175 internal after 7 hours. To reach 190 meat temp how long should this take for a piece of meat this size? I removed the meat at the 7 hour mark and it seemed like it pulled nice but this was my first boston butt and I'm not sure. Any tips would be helpful.

    Roundman,[p]Butts reach a plateau around that mark. It probably was only a hour away based on the size ad that temp.[p]I do 7-8 lb. butts in about 18 hours at 225 grid temp.[p]Just give it a little more time next go around.[p]Cheers,[p]GrillMeister

    I have found the temp difference to vary depending on 1) your setup, 2) how much your cooker is heated and 3) How much of a load of meat and 4) what temp your meat is at.[p]After putting cold meat on the dome/grid temp difference can be 100 degrees or more. Once the meat is heated through the difference is usually less than 20 degrees, and sometimes nearly the same.[p]If you really want to know what is going on I think it pays to monitor your cooking level.
