Huge cook, need advice

On June 19th, I have been called upon to cook for about 100 people at a church outing. That is what the power of the egg does. My question is this; what in the world can I cook for that many people without having to enlist my other, inferior, grills? All suggestions are welcome.

  • Hamm,[p]with only a large egg, and assuming others are bringing side dishes, etc. . .i think i'd go with the double smoked hams. . .they don't take as long as doing something like pulled pork or brisket (1/2 hour per pound), and they are delicious. . .and you could do them over a couple of day period if you wanted to . . .. use the pre cooked hams. .. i did one for an office party recently, and everyone just raved over it. .. .

    A large chuck roll would fit that bill, cook to 200º internal and pull like you would butt. They run 18 to 25 pounds and only have about 20 to 25% shrinkage.

    I just completed a Graduation party for 100 people. Here is what I did ... I enlisted 3 cookers.
    (1) medium Egg
    (1) El Cheapo Brinkman
    (1) Custom trailered cooker (for show at the event)[p]We had food left over .. but its better to have more then run out.[p]Someone on this forum told me to use a calculation of 2.4 servings per pound of uncooked pork shoulder. I have been able to get closer to 2.7 using a 1/2 cup serving.[p]This is what I cooked.
    (7) packages of chicken thighs
    (7) 8 lb pork shoulders.[p]I did the shoulders on my Egg and Brinkman. I had to mess with the temp on my ECB all night ... while the Egg just chugged along. I guess my point is that the Egg brought me peace of mind because I only had to mess with one cooker. If I could have cooked it all on Eggs .. I would have gotten more sleep. :) I cooked all the chicken on the big trailered smoker for the event. Everything turned out great and I'm sure your event will as well.[p]I held the finished shoulders in a cooler until I needed to pull them. Wrap them in foil and a towel and they will stay hot for hours.[p]I read something about someone cooking 5 butts on a large this weekend ... I wonder how that turned out?[p]Good luck and don't try to do it all yourself. Share the load.[p]Anyway ... that's my 2 cents.

  • I would do pulled pork ahead of time and freeze in aluminum 1/2 pans, then just reheat before the event and enjoy yourself. You could so some chicken, brauts or something similar if you really want to cook at the event.

    So, by your calculations if I did 4 8lb butts, I could feed roughly 86 people?

  • Jim Minion,[p]Would one of those fit in an egg? I've only cooked one and it was about 20 pounds and it filled my FE pretty good... Well, at least one shelf... ;-)

    You would not want to build anything very high to put it on, but it would fill it up. I have to pull out every other shelf on the traeger mobile unit. I can do 12 to 15 of them.

    If you pull it well and use portion control on the servings. You might do a test run on one butt to see how much you can get out of it. I have found a large ice cream scoop will fill a sandwich nicely. [p](4) 8# butts shoulder will serve between 75 and 80 people only 1 sandwich. [p]
    Remember we are talking servings ... not people![p]
    I have found that guys will eat at least 2 sandwiches and teenagers will clear out a pan. ;-)
    For 75 to 80 people, you will need at least 130-150 servings of pork.[p]
