Leftover Pulled Pork?

I had some left over pulled pork in a foodsaver bag in the freezer. I decided I should use it up this weekend. I decided to try pulled pork enchiladas.
I used a green enchilada sauce from the grocery (La Victoria I think). I just stuffed about 2 Tbsp of pork into each corn tortilla, rolled and placed in a pyrex baking dish. Then, I topped with more sauce and colby / jack cheese. These went into a 350 oven for about 30 - 40 mins until the whole thing was bubbly. I then topped with sliced green onions and diced tomato.
These were some of the best enchiladas ever. My wife said they were better than she has had at any restaurant. The smoke flavor of the pork was soooo nice.
This is an idea I got here on the forum, and I highly recommend it if you have leftover pulled pork. Sorry I did not take pics. The enchiladas went very fast.
Oh yeah, we also had some red beans cooked in a DO on the BGE. I added pork hock, celery, carrot, cumin, salt, pepper, and dried cilantro to the beans. They were really yummy too.

One of the great things about pulled pork is that there are just so many different uses for the leftovers. Your enchiladas sound great!

I agree Dave. My wife makes really simple breakfast quesadillas from our leftovers... sprinkled with a little of the brown sugar based rub, man oh man they are great! Especially with a nice big mug of coffee and some fresh salsa, guacamole, and some sour cream on the side!

The enchiladas are a great idea. I have made them from pulled pork before and then came up with some new ideas from there.

You are welcome, Dave. I bet if you did the enchiladas on the egg next time, you would enjoy those too. Cheese takes on a nice smokey flavor on the egg - you probably know this already.
