Start off with Gfw's River CIty Jerky recipe. I use it for a good base. I use Jack Daniels chips for smoke but don't over do it. I cook at least 6-8 hours at 190 indirect.
Good luck,[p]CWM

Car Wash Mike,[p]Yup.. just to chime in... I'd start with the river city recipe (it is verrrrry good) and play around from there... I love Jerky from the egg... AS Mike said 6-8 hours, @ 190... I use hickory or oak to smoke.. oh yeah flip your beef around every two hours so the drying / cooking is even.[p]Cheers, [p]Brian

Nardi,
Good job on the flipping part, forgot all about it. It is quite important.[p]CWM
