Question about Brisket?

I've had a 7 pound brisket on for about 16 hours now at 210 and it's only reached a temperature of 162...should I be worried?

    Deetwood, no, apparently its in its plateau where the calogen is breaking down. This may take several hours to move past this point. A common thing in briskets and butts.

    Deetwood,[p]16 hrs for a 7 lb'er seems a bit long, but I certainly don't qualify as an expert. The 12 lb'er I did not long ago only took about 9 hrs, and I think that most are 1-2 hrs/lb. I usually cook at 250° dome...at 210° dome your grate is probably 190°'ish so it'll be tough to get that thing finished with the cooker that low...[p]I'd bump it up some...

    QBabe, hi toots.. and you and MickeyT are both correct, I overlooked the 210 dome temp..he is still o.k. but its going to push the time to longer cook. He is barely above the danger cook zone.
    240 Dome is about where I run, and 250 is o.k. too. If he goes much longer he can just roll it in foil and finish the job there. If he runs out of fuel, pop it in the oven and let'er finish up in there. The main point of the ceramics cook is already accomoplished.
