Does brisket take less time than Pork?

I see some of you cooking a 10 pound brisket for six hours. I six pound pork butt took me about 18 hours.

You are correct in your timings, although a 10 pound brisket in 6 hours seems a little fast. When I cook a brisket, I cook at a higher temperature like 275. Also, when I cook brisket I usually cook just the flat, so the thickness of the meat has a lot do with the how long it takes to cook.[p]A Boston Butt is almost three times as thick as the brisket that I cook. The fact that I am cooking at a significantly less temp 225 or less and the thickness of the roast contributes to the longer cooking time.[p]Hope this helps,

While either piece of meat can act like a turbo cook sometime, my general rule-of-thumb for a 250 dome temp is about 1 1/2 hr./lb for brisket and 2 hr./lb for pork butt.
