i have a venicin hind quater (back leg)
i know it does not have much fat
i am going to smoke it at 200 does anyone know the internal temp to achieve or any other ideas

The only way I smoke venison is like this or sausages, but a few others have done what you are looking for. Hopefully someone will chime in.

Edit to Add: Do a search of venison or smoked venison and I'm sure you'll find some information. -
I cover with bacon to keep from drying out.

I brine mine for a couple of days, then inject lard with a larding blade (not sure what you call it). If no lard, cover with bacon. You're temp sounds bout right. Depending on how you serve it, internal temp will vary.... good luck!

put it on the grill.... call some friends... have a big batch of bbq sauce and a sharp knife..... have your pals slice off the meat as it cooks... keep slathering on the sauce each time you cut off some slices of cooked meat.... drink lotsa beer.... it will disappear and you have some grateful pals...i've been doing this for 40 years...it never gets old.... except for the guys who never bring beer or reciprocate the hospitality...lol
