Champagne and Tails...with the Chick!

Had a very nice evening with "The Chick" yesterday!
Started of with a some "Appys and Champagne"...and while the Queen lounged a bit...I manned the Small, Lobsta's in hand!
Split...skewered, and splashed!

Finnished with a Champagne & Bourbon Vanilla Butter sauce...

Now...where did the rest'sa that Champagne go?

Sure...
You start with Champagne, minced shallots, a few fresh thyme sprigs, and split a vanilla bean. Bring to a boil and then simmer till its reduced by about 1/2.
Strain...then bring back to heat and (1 oz at a time) wisk in about 1 and 1/2 sticks of sweet butter so as to make a smooth sweet sauce.
Keep warm...garnish with a pinch of Smoked Paprika and a few grates of whole nutmeg.
I never would'a, (on my own) paired vanilla with shellfish...but ooooh man!
Lots of possibilities for variations on this theme.

I met AZRP this weekend and he wasn't nothing like you warned me. He was a nice guy, with a fabulous wife and great family. Randy seemed okay, so maybe you should give him one more chance?

"Bourbon" here is a type of Vanilla bean. They usually come from Madagascar. They have a different flavor/aroma than Mexican or Tahitian Beans.I spent most of my money on good bourbon, and bad women...the rest, I just wasted!!

Wow, that's impressive Chubby! I've only done tails once and think I went a little long. Very inspiring!

These were about 8 oz.s each...direct about 375'to 400 degrees.
If you split them (as shown)and skewer then to keep them straight they cook a bit faster, and they're easy to monitor.
About 2 1/2 mins...flesh down.
Flip over, (on shell)...brush with butter...and continue for 4-5 more mins.
Better to pull'em a bit early...as they carryover cook.

Isn't it?!? I'm thinking it'd be an awesome first course plated up that way (smaller serving).
I'm also thinking that sauce would be amazing on other foods as well...
