Chicken Okra Gumbo

Asked my bride what she wanted for Valentine's Day - she said chicken okra gumbo
Ingredients: 3 medium onions, 2 bunches of green onions, the heart of a celery, 12 thighs, 2 pints of smothered okra, oil and flour for the roux, approximately 1 gallon of turkey stock, and some Tony's

Added the seasoning
Moved the seasoning to one side and browned the thighs
Added the smothered okra and turkey stock, Simmered for several hours, removed the thighs, de-boned and removed the skin.
Nice Pinot Noir and a crusty baguette worked well with it.

Fine fine pot of gumboooo! Dip some french bread in that and your're in hog heaven.

Every year when okra is fresh I put some up in the freezer. It is used for two things - chicken okra gumbo or shrimp okra gumbo.

Year before - the vinegar reduces the slime
