Sunday Steak Dinner w/pics

I thought I would take pictures of dinner today. We had a beautiful day here in the Midwest and it was too good not to take advantage of. I did the TRex method I believe. If this isn't it just let me know![p]Here are the strip steaks for the wife and I prior to cooking. They were rubbed liberally on both sides with sea salt and fresh ground pepper. They sat at toom temperature for at least 30-45 minutes prior to going on the egg. A diet rootbeer goes down nice while Mr. Humpty warms up.[p]jack1.jpg[p]Here are the Jack Daniels wood chips soaking in Jack Daniels. Don't worry, I didn't use that much Jack![p]jack2.jpg[p]OK! Almost ready to sear.....[p]jack3.jpg[p]And this is my favorite part next to the actual eating......[p]jack4.jpg[p]Here is where I pull them off for about 15-20 minutes. I am now convinced that this is the part that makes the steak BOTH tender and juicy. Whoever came up with this step should be commended![p]jack5.jpg[p]Perfectly done to my liking. The wife proclaimed this steak as one the best she has had in a long time. The crispy outside and the juicy and tender inside with a touch of jack smoke is superb. A nice red Italian table wine helped finish this off. The corn-on-the-cob and baked potato unfortunately didn't make the picture.[p]jack6.jpg[p]And here's the last pic to show how juicy it is.
